Make Banana Cinnamon Scrolls with the kids these school holidays

I love eating these scrolls with my kids and knowing that they are free from refined sugar and flour. Yoghurt and wholemeal spelt flour is the easiest dough recipe you will ever find!

Choose a good quality natural yoghurt to boost the nutrition of these scrolls. This recipe is also easily made gluten-free (see the TIP section below).

 Banana Cinnamon Scrolls

Prep time: 20 mins
Cooking time: 20 mins
Makes: 8 scrolls

Ingredients

Dough:

  • 2 cups (280g) wholemeal spelt flour
  • 1 cup (260g) natural Greek yoghurt or coconut yoghurt
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • 1-2 tbs coconut sugar (optional)
  • Pinch of sea salt

Filling:

  • 1 ripe banana (120g) mashed
  • 2 tsp ground cinnamon
  • 1 tsp vanilla extract or powder
  • 1-2 tbs coconut sugar (optional) 

Tip: For a gluten-free version, use 1 ½ cups buckwheat flour, 1 cup almond meal and 1 tsp psyllium husk powder instead of the 2 cups of spelt flour. 

Instructions

  1. Preheat oven to 180 degrees celsius and line a baking tray with baking powder.
  2. Place all dough ingredients into a food processor and process until smooth.
  3. Remove the dough, shape it into a ball.  Place in between two sheets of baking paper and roll it into a rectangle shape (0.5-1cm thick).  Remove the top sheet.
  4. Mix the filling ingredients together in a small bowl.
  5. In a saucepan, warm ½ cup of milk.
  6. Top dough with the banana mixture.  Be careful to leave 2cm free of filling on the longer sides of the dough.
  7. Roll dough into a log shape and cut into even slices to make scrolls.
  8. Place on the lined baking tray and bake for 20-25 mins.
  9. Leave to cool on a wire rack before serving.

Serving and storing leftovers

Serve immediately.  Store in an airtight container in the fridge for up to 4 days or freeze for up to 4 months. Warm before serving.
